Happy Hour @ Sushi Zushi

Mr. T goes on a lot of business lunches – which is sometimes tough when eating low-carb/keto. He has a few ‘usuals’ with some great adaptations which help him stay on track, but sometimes he asks for my help. I typically look up the menu and also yelp.com reviews and photos to narrow down some delicious options to choose from. This last week he went to Sushi Zushi and while I was helping him research their menu I became hooked. I was craving sushi hard-core and had to go! It was pretty set-in-stone after his lunch and he had rave reviews on how amazing it was. Happy Hour…here we come! Continue reading Happy Hour @ Sushi Zushi

Happy Hour @ Clarks’s Oyster Bar

Mr. T and I just recently celebrated our 18 year wedding anniversary – WooHoo!  We wanted to go somewhere new, but it was a Sunday during Spring Break/South by Southwest festival here in Austin so it’s often a bit chaotic around this time. We decided to do an early dinner at Clark’s Oyster bar – firstly because we LOVE oysters and this place specializes in them, but secondly it was happy hour (3-6 daily) so a slight discount on oysters and bottles of wine were half off. You might argue that it was our anniversary and we should splurge, but I do love a bargain…no matter the occasion! 😉 Continue reading Happy Hour @ Clarks’s Oyster Bar

Grilled Salmon and Parmesan Zucchini

Do you ever crave fish – like your day would be incomplete without it? Often we start Monday off (probably due to eating a bit heavier on the weekends) and we just need a nice grilled piece of salmon. I’m sure it’s that our bodies require something on the lighter side, and perhaps we’re needing that ultra dose of rich Omega 3’s and B12 vitamins. I also do my grocery shopping on Monday and I just look at that beautiful jewel-toned fish and even if it’s not on my menu, it somehow ends up in my cart. Then I spend all day waiting for Mr. T to grill it up!  Continue reading Grilled Salmon and Parmesan Zucchini

Andouille Sausage and Shrimp Riceless Jambalaya

Have you ever celebrated Mardi Gras? The Rex’s have been to the Mardi Gras celebrations in both New Orleans and Galveston, TX which do it up in style with a huge parade. Big brass bands, baubles, beads, and beer beyond belief! OK…I’ll quit with the excessive alliteration! It was Mardi Gras this past Tuesday (AKA: Fat Tuesday) and to celebrate we made a zero-rice jambalaya!  Continue reading Andouille Sausage and Shrimp Riceless Jambalaya

Seafood Chowder

Weather in Texas is so strange…our Christmas this year was a high of 78° than a week later it was a high of 34°, a week after that – right back to swimsuit weather. Seriously I wear flip flops all year ‘round! Last week was a tough one, not only did we both have to go out of town for business, but it was drizzly and chilly out. The kind of weather and taxing week that when you come home you just want something comforting. When I asked Mr. T what he wanted he said seafood chowder. I was on a mission to make that happen – and low carb to boot!  Continue reading Seafood Chowder

Steamed Snow Crab with Cilantro Lime Butter

Happy New Year to you and all your loved ones! I know there are many traditions and superstitions people support on New Year’s day to bring good fortune or luck in the new year: grapes, greens, black-eyed peas, to name a few. Here in the Rex household we made up our own tradition. We eat crab! I’m not quite sure why it started, probably that we were at the store and they were on sale and we thought ‘what the heck – lets do something fun and indulgent on NY day’. Then I went online to research various NY traditions I found out crab is not so lucky….sooo perhaps make this on a different day – our fate may already be sealed. 😐  Continue reading Steamed Snow Crab with Cilantro Lime Butter

Shrimp Fried ‘Rice’

Do you ever have a restaurant that you loved so much that now every other restaurant with that cuisine will always be compared to it? I have fond memories of a Chinese restaurant in Katy, TX where we used to live (Hong Kong Garden I am sad your extinct!)  Specifically the eggrolls, the won-ton soup and of course…the pork fried rice!! We were craving Chinese…which always brings up a longing for pork fried rice…obviously takeout PFR is not an option with eating low carb so we decided to make our own version with what I have on hand. I always keep frozen, peeled uncooked shrimp in the freezer and no time to go to the store, so SF’R’ is what we did! It turned out great – with the flavors I was drooling for, but we didn’t have to slay eating healthy!  Continue reading Shrimp Fried ‘Rice’
