Keto/Low Carb Reuben Casserole

Mr. T and I used to live in Houston and on occasion (usually late nights after bar hopping) would wind up at one of our favorite NY-style deli’s: Katz’s Deli. Their slogan is “Katz’s Never Kloses!” They actually had one when we moved to Austin, but unfortunately…it closed😢. Every time we went, we always ordered their famous Reuben sandwiches. Layers upon layers of juicy corned beef with sauerkraut and Russian dressing, all on top of amazing marbled rye bread! So in true Carnivorous Couple fashion…we set out to create a dish that wistfully reminds us of those days of our youth…where used to stay up past 10pm…but without the carbs! Keto/Low Carb Lamb Shepherd’s Pie

Sorry we’ve been extinct for a while…so many things were going on the last part of the year that we had to put the blog on pause (paws? ;). However, we’re back at it – devouring keto, low carb versions of our favorite comfort foods!

Keto/Low Carb King Ranch Casserole

Rarely would you go to a potluck or church social here in Texas and not have King Ranch Casserole. For it to be missing would be like a bride not showing up at her wedding – gasp! It is a layered dish of corn tortillas, chicken, mushrooms, peppers, tomatoes, two kinds of canned soups and tons of cheese! So we decided it was time to try our hand at making this comfort dish and low-carbing it without all the canned soups and tortillas…but how to get that starchy feel without tortillas?
