So if you’ve read our post on Shrimp Fried ‘Rice’ you already know my obsession with the Chinese restaurant near where we group up…Hong Kong Garden and how no other Chinese place will ever be it’s equal. As I’ve been attempting to remake those dishes at home I have come up with another that hints at my favorite egg roll, but combined with Char Sui pork thrown in. It’s almost like if pork fried rice and the fillings of an egg roll got married had a delicious baby! I know…creepy thought, but keto and oh so scrumptious! Asian Pork Lettuce Wraps

Probably the very first experience we ever had with wrapping something in lettuce was the Chicken Lettuce Wraps from P.F. Changs. I remember being there for a friends birthday and she ordered this for the table. That experience blew my mind at how something could be so fresh and so good (OK the only fresh part was the lettuce) and it was a fun experience to boot! This week I made my own version: Asian Pork Lettuce Wraps. Just as delicious as the original, but keeping it on our low-carb plan. Happy Hour @ Sushi Zushi

Mr. T goes on a lot of business lunches – which is sometimes tough when eating low-carb/keto. He has a few ‘usuals’ with some great adaptations which help him stay on track, but sometimes he asks for my help. I typically look up the menu and also yelp.com reviews and photos to narrow down some delicious options to choose from. This last week he went to Sushi Zushi and while I was helping him research their menu I became hooked. I was craving sushi hard-core and had to go! Asian Stir-Fry Meatloaf

Mr. T and I are obsessed with cooking shows. We watch A LOT of them. Our favorites tend to be Masterchef, Chopped, Top Chef, Beat Bobby Flay and The Kitchen…the list goes on. I have noticed an increasing trend on the various shows for meatloaf. It makes sense, as this comfort classic can be made a myriad of ways – and it’s so easy to change up the ingredients to take on a new twist. My version…Asian! Shrimp Fried ‘Rice’

Do you ever have a restaurant that you loved so much that now every other restaurant with that cuisine will always be compared to it? I have fond memories of a Chinese restaurant in Katy, TX where we used to live (Hong Kong Garden I am sad your extinct!)  Specifically the eggrolls, the won-ton soup and of course…the pork fried rice!! We were craving Chinese…which always brings up a longing for pork fried rice…obviously takeout PFR is not an option with eating low carb so we decided to make our own version with what I have on hand. I always keep frozen, peeled uncooked shrimp in the freezer and no time to go to the store, so SF’R’ is what we did!
