What party isn’t complete without shrimp cocktail?! And what is a brunch without Bloody Mary’s? Here we are combining the flavors of a shrimp cocktail and a bloody mary – best of both worlds and super easy to make. Plus you’ll stay on your keto plan and no one will be the wiser. 😉
Eons ago – when Mr. T and I were just dating, he took me to this seafood place (the restaurant was shaped like a boat – suuuuper classy). Of course, we ordered peel and eat shrimp because they are awesome! When they arrive he challenges me to a bet, who can eat their shrimp faster than the other. If he wins…a kiss – I think if I won, he was to wash my car (such a romantic I am). So, here I am peeling off the shell and pulling the legs and I look over at Freddy and he’s wearing this massive grin. He ate the whole thing, shell and all! That trickster! 😆
What’s funny is over the years I found out Mr. T is not a fan of shrimp or bloody mary’s, but somehow he really digs this appetizer! It’s got the horseradish bite, and some spice from the habanero bloody mary mix. I make this super easy by adding store bought pico de gallo and some freshness with cilantro. I even use pre-cooked frozen shrimp (I got a 2lb bag from Costco for about $14) – which I typically don’t use – I prefer to cook my own, but I find once you marinade it for 4 hours it just takes on all the amazing flavor of a bloody mary. Bloody Mary Shrimp Cocktail (keto/low carb)
2lbs pre-cooked frozen shrimp, peeled, with tail (great handle!)
1c Bloody Revolution Smoked Habanero bloody mary mix
1c HEB medium pico de gallo (or any store bought)
1-2 Tbsp Louisiana Fish Fry Remoulade Sauce
2 Tbsp cilantro
2tsp horseradish
1 Tbsp celery seed
smoked sea salt
Defrost shrimp and rinse under running water. Pat dry. In a ziplock, combine the rest of the ingredients. Jostle to combine. Add shrimp and let it marinate at least 4 hours – tossing occasionally. We just server in a bowl, with a spare for the tails. Ahoy matey! 🦐
NOTE: This is also delicious if you cook your own shrimp. If you prefer to do this, use 2lb’s of raw peeled, deveined shrimp. Boil 8 cups of water. Add in a half package of crab and shrimp boil seasoning and thawed shrimp. Cook 2 minutes or until shrimp turn pink. Turn off the heat and let sit another 5 minutes in the hot water or until they have reached the proper doneness.
Serves: 12 (about 6 shrimp each, but so carb-affordable you might eat way more)
