With the ‘stay at home’ ordinance due to the coronavirus epidemic, Mr. T and I have been cooking a lot more. During the week we stick to a more strict low-carb/keto, but on the weekends we just aim for low-carb and add in some more splurge-y type items (like using Mission’s low carb fajita size tortillas and these Lavash flax flatbread’s I found a Costco). Yes, they have some carbs, but the Net carbs are fairly low due to the high fiber. Hot Springs, AR – RV roadtrip while low-carbin’ it!
Mr. T and I have been trying to find a way to beat this brutal Texas heat during the summers. We are lucky in that we get to work remotely and as long as we have a strong enough wiFi & cell signal, could pretty much work from anywhere! So we recently acquired a travel trailer and after a few mini weekend getaways, decided to take it on the road for what we call a “work/play” trip. We wanted something that was easy to get to in a days drive – in about 7 hours and Hot Springs ended up being our destination. We were going to stick to our keto/low carb way of life, so as you can imagine, that takes some effort!

Keto/Low Carb Reuben Casserole
Mr. T and I used to live in Houston and on occasion (usually late nights after bar hopping) would wind up at one of our favorite NY-style deli’s: Katz’s Deli. Their slogan is “Katz’s Never Kloses!” They actually had one when we moved to Austin, but unfortunately…it closed😢. Every time we went, we always ordered their famous Reuben sandwiches. Layers upon layers of juicy corned beef with sauerkraut and Russian dressing, all on top of amazing marbled rye bread! So in true Carnivorous Couple fashion…we set out to create a dish that wistfully reminds us of those days of our youth…where used to stay up past 10pm…but without the carbs! Keto/Low Carb Crack Slaw with Char Sui Pork
So if you’ve read our post on Shrimp Fried ‘Rice’ you already know my obsession with the Chinese restaurant near where we group up…Hong Kong Garden and how no other Chinese place will ever be it’s equal. As I’ve been attempting to remake those dishes at home I have come up with another that hints at my favorite egg roll, but combined with Char Sui pork thrown in. It’s almost like if pork fried rice and the fillings of an egg roll got married had a delicious baby! I know…creepy thought, but keto and oh so scrumptious! Keto/Low Carb Amen Wings (Smoked or Oven version)
How have we gone this far and not done a post on wings!? Buffalo wings are so readily available and usually a good low carb appetizer option for going out to eat – just stay away from anything saying ‘sweet’ or ‘honey’. One restaurant based here in Austin makes my favorite sauce – a combo of part BBQ sauce/part Wing sauce and with diced pickled jalapenos for some heat. Keto/Low Carb Spicy Chicken Curry & Cauli-Rice
Sunday evenings used to be our splurge meals. We would be so wiped out from the weekends that we would just get takeout, sit in front of the tube and binge watch Netflix. One of our favorites, partly because it lends itself well to takeout, but also because we just love it is Indian and Thai food. Give us a spicy curry dish any day! Low Carb Turkey Bolognese with Spaghetti Squash
Sometimes you just crave a big bowl of hearty Italian pasta and sauce. Since going keto, I find when I go without pasta for so long I pretty much could go months without that craving, but then BAM! It hits me like a lightning bolt. One of my favorite classic sauces is a Bolognese. We’ve redone it and paired it with some doctored up spaghetti squash for a hearty, comforting low carb meal that will be sure to please. Buon appetito!
