With the ‘stay at home’ ordinance due to the coronavirus epidemic, Mr. T and I have been cooking a lot more. During the week we stick to a more strict low-carb/keto, but on the weekends we just aim for low-carb and add in some more splurge-y type items (like using Mission’s low carb fajita size tortillas and these Lavash flax flatbread’s I found a Costco). Yes, they have some carbs, but the Net carbs are fairly low due to the high fiber. This weekend, we were craving pizza – and we wanted to use up some of the veggies we have in the fridge – so we created this low-carb Mediterranean pizza flatbread! Easy to make but oh-so satisfying! Fig, Prosciutto & Gorgonzola Meatza
There are many a pizza that can be considered the best here in Austin. I highly recommend Home Slice, Austin 360 and Pinthouse. For a more unique pizza experience, Mr. T and I love this one pizza from Via 313. It’s called the Cadillac; topped with gorgonzola, fig preserves, prosciutto di parma, parmesan and a balsamic glaze. Let me just say…out of this WORLD! Naturally, as low-carber conscious that we are, we’ve found a way to reinvent this so we can indulge, while skimping on the carbs! Sausage, Mushroom and Onion Quiche-Pizza (Quiche-za?)
Who doesn’t love pizza? I mean, really?! Ooey gooey cheese and sauce, loaded with toppings. Here is my version of that, but using a quiche as a crust so we can enjoy that thing we crave, but without the carby guilt. I’m not going to lie…you can’t pick this version up and eat it with your hands (or do the whole New York thing and fold it in half), but the flavors are there and the base is also jam-packed with cheese and Italian flavors.
