Spicy Cilantro Ranch Dip

There is this amazing Tex-Mex restaurant that originated in Austin (now has many locations all over the U.S.) that we go to quite often. I don’t think we’ve had one dish there that we don’t like. One of the highlights is they serve an amazing creamy jalapeno dip. I don’t know anyone who doesn’t love this dip. You have to request it, but you do, you won’t be disappointed. It’s got a slight heat and a zing that just has such a perfect balance of flavors. Fig, Prosciutto & Gorgonzola Meatza

There are many a pizza that can be considered the best here in Austin. I highly recommend Home Slice, Austin 360 and Pinthouse. For a more unique pizza experience, Mr. T and I love this one pizza from Via 313. It’s called the Cadillac; topped with gorgonzola, fig preserves, prosciutto di parma, parmesan and a balsamic glaze. Let me just say…out of this WORLD! French Deviled Eggs

Perhaps the most perfect appetizer is a deviled egg. Those little gems are super low in carbs, packed with delicious protein and always a hit at a party (usually the first to go)! Lately we’ve been noticing quite a trend for restaurants as well – always having some fancy form of this on their small bites menu. To change this up a bit we came up with our version that we’re calling French Deviled Eggs. I actually wanted to name them French DeVIL’d Eggs, but figured I might get kickback (like it’s the FRU-ETS of the DEV-EEL). Asian Pork Lettuce Wraps

Probably the very first experience we ever had with wrapping something in lettuce was the Chicken Lettuce Wraps from P.F. Changs. I remember being there for a friends birthday and she ordered this for the table. That experience blew my mind at how something could be so fresh and so good (OK the only fresh part was the lettuce) and it was a fun experience to boot! This week I made my own version: Asian Pork Lettuce Wraps. Just as delicious as the original, but keeping it on our low-carb plan. Peanutty Kale Salad

About 6 or 7 years ago, Mr. T and I went vegetarian (GASP!). I know…that might have shocked you all being that our whole blog is about us being bone crushing, bacon eating, rib smacking carnivores. Seafood and Chorizo Paella

We have a cute Spanish Tapas restaurant named Barlata pretty close to the house and they have really delicious food. They happen to have an excellent happy hour (I must write a post about that one), and they have a whole section on their menu for the variety of paellas  – 9 to be exact! Paella is a flavorful rice dish – kind of like a Spanish version of fried rice, but way more refined. It’s full of exotic spices – saffron is a must here, and some vegetables, but is also loaded with delicious proteins. I’ve seen so many different types of seafood, chicken, chorizo, andsometimes game meat such as rabbit. Below is my take on making this keto-friendly with a couple of swaps. Grilled Salmon and Parmesan Zucchini

Do you ever crave fish – like your day would be incomplete without it? Often we start Monday off (probably due to eating a bit heavier on the weekends) and we just need a nice grilled piece of salmon. I’m sure it’s that our bodies require something on the lighter side, and perhaps we’re needing that ultra dose of rich Omega 3’s and B12 vitamins. I also do my grocery shopping on Monday and I just look at that beautiful jewel-toned fish and even if it’s not on my menu, it somehow ends up in my cart. Asian Stir-Fry Meatloaf

Mr. T and I are obsessed with cooking shows. We watch A LOT of them. Our favorites tend to be Masterchef, Chopped, Top Chef, Beat Bobby Flay and The Kitchen…the list goes on. I have noticed an increasing trend on the various shows for meatloaf. It makes sense, as this comfort classic can be made a myriad of ways – and it’s so easy to change up the ingredients to take on a new twist. My version…Asian! Keto/Low Carb King Ranch Casserole

Rarely would you go to a potluck or church social here in Texas and not have King Ranch Casserole. For it to be missing would be like a bride not showing up at her wedding – gasp! It is a layered dish of corn tortillas, chicken, mushrooms, peppers, tomatoes, two kinds of canned soups and tons of cheese! So we decided it was time to try our hand at making this comfort dish and low-carbing it without all the canned soups and tortillas…but how to get that starchy feel without tortillas? Andouille Sausage and Shrimp Riceless Jambalaya

Have you ever celebrated Mardi Gras? The Rex’s have been to the Mardi Gras celebrations in both New Orleans and Galveston, TX which do it up in style with a huge parade. Big brass bands, baubles, beads, and beer beyond belief! OK…I’ll quit with the excessive alliteration!
